About the Author
Hi, I’m Eli—creator of Simple Keto Kosher. This cookbook was born from my personal journey navigating low-carb, kosher cooking after my son Ezra was diagnosed with Type 1 Diabetes in 2014. I began developing recipes that could support his health without sacrificing the joy of good food or our Jewish traditions. What started as a mission to recreate Ezra’s favorite meals—waffles, cookies, chips—in a low-carb way, turned into a full-on passion. Inspired by keto pioneers like Carolyn Ketchum and Maria Emmerich, I’ve spent the past decade refining recipes that are kosher, practical, family-friendly, and rooted in tradition—from Shabbat kugels to keto hamantaschen. This cookbook is for anyone managing diabetes, cutting sugar, or just looking to eat better—without giving up flavor or heritage. Why I created this cookbook?
I wrote this cookbook out of love and necessity—after my son Ezra was diagnosed with Type 1 Diabetes in 2014, I dove into low-carb cooking to help manage his health without sacrificing the joy of food. Over the years, I adapted family favorites into delicious, kosher, kid-approved meals that fit a low-carb lifestyle.
Now, I’m paying it forward—giving back to those who may need to follow a keto or low-carb diet but keep strictly kosher. Whether you’re a kid or an adult, I want to make sure you have access to recipes that are nourishing, doable, and full of flavor. This book is here to make that journey easier for you.
